    It is a matter of taste, the bread would be have a stronger yeast flavor…I prefer a less yeasty flavor.

    I bought the pans many years ago at a place called “Bridge”, a kitchen supply store. You can probably find them online..looking up french baguette (bread) pans.

    Joyce, i’ve been attempting to make Italian bread for 15 years and the taste is always ok but the bread never looked right. i’ve had 3 different Italian women work with me but have never been able to do it right on my own. I watched your video and tried it right away. It was perfect. My husband and two children loved it also. Thank you so much!

    I retired last year and have been trying to make bread because I really enjoyed it.
    For the past two months I have been trying this recipe and that, but have only been producing doorstops. Ant suggestions on recipes or technic? Maybe I should look into baking school.

    Roxbytes: This reminds of the old days. The kids were banded from the kitchen during bread making especially during rising process. Lord help you if you stomped your feet and/or opened the oven door. There were dire consequences – a flying slipper or a wooden spoon, choice words in Italian of course and verity of hand gestures. Bush’s shoe attacker could learn a thing or two regarding projectiles.

    It’s important to use fresh flour (flour can get rancid). I always use unbleached flour, when I’m making a white bread.

    Also…it’s possible that you let your dough rise too long, and that would give it a stronger flavor (like sourdough).
