    Many people knows corn meal as “Polenta”, but is the same thing. There is a big diference between corn meal and corn fluor, the first one is granulated and the other one is powder, In Mexico in known for the brand “Maseca” and it is used to make tamales.

    In the UK it is called Polenta. I’m from a Jamaican background and we call it cornmeal but it’s posher in London who’ve taken the Italian name.

    Yay! Someone that knows you must use an IRON skillet for true cornbread! My Dad is from Texas, so we always had our cornbread (made this way) in a skillet, the kind you get at Marie Callendars, blech, to high, sweet and doesn’t have the crunchy sides like a skillet bread!
