You must have got a recipe book with it when you bought it.We have a Breville breadmaker & it has recipes for every type of bread you can imagine.Failing that, you could google it & maybe find a recipe.

I am working on a class project and our case is Panera Bread. One of my tasks is to do the SWOT (strengths, weaknesses, opportunities, and threats) analysis. I cannot continue on with my other tasks until I have done this, and my group needs the information too.

I have a few basic ideas, but I am struggling with it mostly. I know that S & W are internal and that O & T are external factors.

*** I’m not asking for someone else to do my work, I am simply just trying to get some ideas from other "everyday consumers" as to what you see they might improve upon, or simply what you think they are good for. Is there somewhere online I can look this up or come up with ideas. I tried the website, but it is mostly locations, recipes, and background on the company… nothing useful.

Once again, what are Panera’s strengths as a business, weaknesses, opportunities, and threats? Any help would do, and it would get me off on the right track. I think once someone throws me some ideas, I could probably take it from there.

Thanks!

Strengths- Fresh baked bread everyday, majority of their bakeries offer free WIFI, and its a healthier option than most fast food places
Weaknesses- Because the majority of the food is organic and the bread is fresh everyday the prices are higher than many fast food restaurants
Opportunities- They do offer espresso bar drinks which are good but they could also expand on the options the offer by including more sugar free syrups or for their blended coffees more flavors in general other than caramel and mocha
Threats… im thinking you can take it from here

Baking powder consists of a mixture of baking soda and a substance such as cream of tartar. In the production of carbon dioxide gas, baking powder acts differently from baking soda. When water is added to baking soda, it just dissolves. But when water is added to baking powder, carbon dioxide gas is produced. What’s the purpose of cream of tartar & how does it accomplish it’s purpose?

Cream of tartar is an acidic compound. It is the mono-potassium salt of tartaric acid, which has two acidic protons. The second acidic proton can still react with the baking soda (sodium bicarbonate) to produce water and CO2.

KH[tartrate] + NaHCO3 –> NaK[tartrate] + H2O + CO2

This year for Christmas, I’m thinking about getting some baking books for my niece who is graduating from High School. She want’s to become a pastry chef, and I think the best way to start is to begin with a simple baking book.

So, what are some low cost baking books out there(cookies, cupcakes, etc.?)

As far as the basics go, I usually turn to the CIA books. "The Professional Pastry Chef" is a great resource.

http://www.amazon.com/gp/product/0471359254/ref=pd_lpo_k2_dp_sr_3?pf_rd_p=486539851&pf_rd_s=lpo-top-stripe-1&pf_rd_t=201&pf_rd_i=0471382574&pf_rd_m=ATVPDKIKX0DER&pf_rd_r=0A4DYC6Z096B1Q8A8JK8

other good CIA books

http://www.amazon.com/Frozen-Desserts-Culinary-Institute-America/dp/0470118660/ref=sr_1_2?ie=UTF8&s=books&qid=1258004459&sr=1-2

http://www.amazon.com/Chocolates-Confections-Formula-Technique-Confectioner/dp/0764588443/ref=sr_1_1?ie=UTF8&s=books&qid=1258004544&sr=1-1

http://www.amazon.com/Artisan-Breads-Culinary-Institute-America/dp/0470182601/ref=sr_1_11?ie=UTF8&s=books&qid=1258004544&sr=1-11

http://www.amazon.com/Professional-Chef-Culinary-Institute-America/dp/0764557343/ref=sr_1_1?ie=UTF8&s=books&qid=1258004625&sr=1-1

For inspiriation, Johnny Iuzzini’s book "Dessert FourPlay" is a great book for anyone interested in the industry.

http://www.amazon.com/Dessert-FourPlay-Quartets-Four-Star-Pastry/dp/0307351378/ref=sr_1_1?ie=UTF8&s=books&qid=1258004459&sr=1-1

Books like The Joy of Cooking, Betty Crocker, Paula Dean etc… have great recipes for home cooks, but don’t convey the theory, or basic fundamentals needed for someone looking to make it professionally.

Sheloves: God forbid you are helping people. If somebody asks is because needs help and doesnt know, not to be scolded and ridiculized… GOOD GRIEF…

Big oven definitely! OK, here is a video recipe(10 minute prep time) showing step by step how to make and bake the bread. Shape it how ever you want long, short, rolls etc.. Add onions, cheese, or something special you have in mind. At the end you must remove it to cooling racks or it will sweat on the bottom, don’t ruin your beautiful bread!!!

If you do make bread in the bread maker it is very important to remove it to cooling racks when it is done also, it will really sweat in that bread machine pan!

I put arm & hammer baking soda in my cookie batter, realizing later it tasted horrible. What does it mean when a cookie recipe says to add baking powder?
my bad…my question:What is the difference between the baking powder in foods and the baking powder fridge fresheners?

Baking powder and baking soda are 2 different items. Baking powder, normally double acting, is actually baking soda plus cream of tartar. They are both used as leavening agents in cookies and cakes. While they don’t taste good raw, I rarely notice their taste in the finished baked product. If I do notice it in the finished product, I probably use less the next time.

As far as the fridge fresheners, I use my old box of baking soda. If they’re actually selling fridge fresheners, they’re just trying to make an extra buck.
