			<content:encoded><![CDATA[<p>I&#8217;ve found  a couple recipes I would like to try but they call for a bread machine, which I do not have. Can I mix the ingredients by hand or do I need to look for more recipes?<br />
<br />Basically, the bread machine takes the physical work and the many steps out of baking bread and bread products. All you do is throw everything into the machine and it mixes, kneads, raises, times, and will even actually bake the bread for you if you want. Bread machine recipes can all be made the old fashioned way. It requires you to dissolve the yeast in warm liquid (not hot) with a little sugar, or honey, molasses, something sweet to feed the yeast while it multiplies. Mix together all the wet ingredients including any eggs called for. Now add the sifted flour, salt, whatever else that&#8217;s dry to your liquid. Be careful not to add it all at once because if it gets too dried out you are out of luck and have to start over. Bread making by hand is an art and you need to learn to judge when the dough is just right, not too dry, not too sticky. Knead everything together until your dough is smooth and elastic. Place in a greased bowl, and turn it over so the top will be greased too. This lets the dough rise smoothly. Cover with plastic wrap, or a damp towel and let rise in a warm (not hot) place for about 1 1/2 hrs or until double. Punch down, form into loaves or rolls and let rise again, about an hour. Bake at 350 until brown and it sounds hollow inside when thumped, about 30 minutes. Immediately remove from pan and cool on a rack away from drafts. To make a tasty crust, I brush the hot bread with butter. Enjoy. Buy a bread machine! Put it on your Christmas list!</p>

Cheesecakes<br />

Whipped Cream<br />
3/4 cup whipping (heavy) cream<br />
2 tablespoons granulated or powdered sugar </p>
<p>1. Heat oven to 350F. Line 18 meduim muffin cups, 2 1/2&#215;1 1/4 inches, with paper baking cups. Split sandwich cookies in half. Place 1 cookie half, middle side up, in each cup. Or place 1 wafer cookie, flat side down, in each cup.<br />
2. In large bowl, beat cream cheese with electric mixer on medium speed until smooth. Gradually beat in 1 cup sugar and the cocoa until fluffy. Beat in vanilla. Beat in eggs, one at a time, until well blended. Divide evenly among cups (cups will be almost full).<br />
3. Bake cheesecakes 20 to 25 minutes or until centers are firm. Cool 15 minutes (cheesecake centers will sink while cooling). Refrigerate in muffin cups at least 1 hour; cover and refrigerate at least 1 hour longer before serving.<br />
4. In chilled small bowl, beat all Whipped Cream ingredients with electric mixer on high speed until stiff. Spoon Whipped Cream on chilled cheesecakes. Cover and refrigerate any remaining cheesecakes. </p>

<p>They are bagels with eggs, oil, salt, flour and then you boil them.  Let them dry out, then bake them.  They come out soft, I want a little crunch to it.  </p>
<p>If I put baking soda, can I boil them?<br />

I love bagels.<br />
<br />Baking soda is bicarbonate of soda in powder form and is used as a leavening agent in baking.  It reacts with acid (buttermilk, lemon juice, vinegar etc.) creating carbon dioxide which causes the baked goods to puff up.<br />
Baking soda will have nothing to react with if you add it to your recipe.  Double acting baking POWDER will react to the heat of boiling, but I don&#8217;t know if you want the extra lift this will cause.  You might try brushing a lightly beaten egg over the top of the bagel before you bake it.</p>

I&#39;m not exactly an experienced cook, but I do love this recipe, and I was just wondering if it was possible to make a lighter, brighter, but still moist red velvet cake in this way. <br />If you are cooking with only the egg whites, use two egg whites in place of each whole eggs.   Quality and taste will not be effected but cholesterol levels will be lower.</p>
