Recipe:
4 squares Baker’s Semi-Sweet Baking Chocolate
1/2 cup (1 stick) butter
1 cup powdered sugar
2 eggs
2 egg yolks
6 Tbsp. flour
Preheat oven to 425 degrees Fahrenheit. Butter four custard/ramekin/souffle dishes. Place on baking sheet.
Microwave chocolate and butter in large microwaveable bowl on high 1 minute or until butter is melted. Stir with a wire whisk until chocolate is completely melted. Stir in sugar until well blended. Blend in eggs and egg yolks with wire whisk. Stir in flour. Divide batter among prepared custard cups.
Bake 14 minutes or until sides are firm, but centers are soft. Let stand one minute. Carefully run a small knife around cakes to loosen. Invert cakes onto dessert dishes. Serve immediately, topped with whipped topping, if you like. (I personally think it would distract from the flavor, and would be a bit of over-kill).
BE CAREFUL!!!! It is VERY VERY hot when it first comes out. The sides are fine–it’s the molten lava that will kill you if you aren’t careful.
Lea (achampag) brought up a good issue. She asked what if you didn’t have ramekin cups. Duh! I think everyone has all the crap I do! You can easily use muffin tins. I would use the jumbo sized ones, but you can also use the regular sized ones. You would bake them for 10 minutes. If using the smaller sized tins, watch it at around 8 or 9 minutes. You don’t want to over-cook it, as basically you would cook the ‘lava’ into harder form and be left basically with a brownie!
