Most whole wheat breads are vegan.

It’s the commercial varieties that sometimes use milk, but rarely eggs, which tend to be more common in specialty white breads.

I developed my own recipe and throw the following ingredients in a breadmaker:

2 1/2 cups whole wheat flour
3/4 cup quinoa meal (you can prepare this in a coffee grinder)
    1/4 cup flax meal
    1/4 raw sunflower seeds
    3 T gluten
    3 T raw cocoa powder
    1 rounded T yeast
    5 T orange juice concentrate
    1/2 t salt
    1 T olive oil
1 3/4 C water (you may have to adjust this; dough should be firm but elastic)

The recipe’s high in fiber, low in sugar, fat, and salt, and it gives you complete protein. It’s also tasty!

Just sub either Earth Balance (vegan butter) or olive oil for the butter. I use olive oil & people go crazy for this bread! It’s delicious! (You can also omit the sugar if need be, but 1 Tbsp. for a whole loaf, used mostly for proofing the yeast, isn’t too bad.)
